Vegan MoFo: Day 31

I will admit that it’s a relief that Vegan MoFo is drawing to a close. But it’s been fun. And pretty darn easy (after getting past a few initial negative responses). I managed to follow through on making time for things that are important to me, but that meant bailing on being sure to use up things in my cupboard as well as making several more trips to Daily Juice than originally planned. I did get to try a bunch of new restaurants and a few new recipes.

Today I had a cupcake for breakfast, a frozen Amy’s burrito for lunch and no idea what dinner has in store for me, so I’m going to close up with links to some new blogs I’m following thanks to Vegan MoFo and some recipes I’m planning to try out.

Vegan MoFo: Day 29

anglerI tried a new place today – Chubby Hug Happy Fun Noodle Time – but I totally forgot to take any pictures. So instead you can look at my angler fish costume while I tell you that Rick and I ordered #2 and #3 and split them both. They were both delicious, but the cold ones were decidedly better than the hot ones. I look forward to trying #1 in the future and to taking Sassy on a nice walk over here for my noodle fixes.

I ended up staying late at work to finish prepping for a class coming in tomorrow and I knew I needed to spend the evening making my Halloween costume, so I stoped by the Daily Juice on  my way home and picked up one of their raw vegan sushi to go boxes and a peach mango smoothie. I’m officially declaring that sushi one of my desert island foods.

I was wiped out from allergies when I woke up this morning. I called in sick and slept until 1:30! When I finally got up I was hungry but didn’t feel like making anything. So I decided to try my new fig spread:

Vegan MoFo: Day 24

The other night I was really craving some cookies, but I knew I didn’t have much flour or sugar left (an extreme rarity for me) and was unsure about a number of other ingredients as well. After about the 5th time that I said out loud that I really could go for a cookie I decided I’d better get baking. I pulled out Veganomicon despite my unimpressive experiences with its baked goods in the past because it was handy and seemed likely to have an oatmeal cookie recipe. I wanted chewy and figured oatmeal would help offset my lack of flour. The recipe said you could use regular flour or whole wheat pastry flour – which reminded me that I had some of that to use up! So I did about half and half. I don’t know for sure whether it’s the pastry flour’s fault or the lack of margarine or any type of egg replacer, but these were a let down.  They weren’t terrible, but they weren’t what I’d call chewy and the oatmeal was not nearly enough front and center for my tastes. I really need to just officially retire Veganomicon from my baking repertoire. Isa’s and my taste-buds are just too different. cookiescookiescookies

Way too busy today. Much of it was fun, but still, too much is too much. Daily Juice was the answer. I forget what the smoothie was. I said I was having a hard time deciding and one of the chefs said very authoritatively I should have the something with goji berries. I said OK. And got a raw cheesecake to boot. dinnercake
